AKE NO MISTAKE, THERE ARE DOZENS OF GLUTEN-FREE
dining options in Rochester, but the aptly nicknamed Flour City
also excels in the ways of wheat, especially now.
Begin your Saturday at Rochester’s Public Market, a place
with a year-round schedule that’s open to vendors of all kinds. Plenty of locally
raised produce is available, butso are mangoes, limes, live chickens, and more. The
market dies down around 1 p.m.; it’s best toarrive by 10 a.m. There are plenty of
places to grab a snack here, but Flour City Bread is justly famous. Located next
door to Cure restaurant (which is a Java’s Cafe pop-up during daylighthours), FCB
creates bread of superior quality, in both French and Italian styles, with occasional forays into the floury traditions of other European countries. The loaves beckon from baskets behind the counter; sometimes their jaunty brown ends are all
you can see from the very back of a long but understandable line. The day’s pastries are atypical of those found in the Queen City: wooden shelves inside the glass
bakery case are laden with canelé, Paris-Brest, knobby brioche, and other marvelous works of flakey, buttery, edible art. A Flour City Bread jambon beurre with a
cup of coffee from next door make perfect partners for strolling the market. Save

When I spoke with four of Western
New York’s 2017 award-winning brewers,
the bumper sticker idiom “Do what you love
and love what you do” stubbornly lodged in
my mind. Yes, these brewers love beer. And
yes, they love brewing it. Not surprisingly
then, this group—professionals who exude a
deep knowledge and passion for their craft—
sit at the top of the class.

Coffee chocolate caramel and roast—these are the most prominent flavor
notes of Community Beer Works The Whale Brown Ale Instead of heavy
hops “you get a smooth malty fulsome and delicious 58% ABV all-season
ale that pairs well with a wide range of foods but also drinks great on
its own” says president Ethan Cox The Whales recipe has evolved from
original head brewer Rudy Watkins recipe but remains grounded in the
“simple joy of creating a great expression of the Thomas Fawcett Brown
Malt which contributes the bulk of the flavor” Its rounded out with other
malts a dash of hops and a fairly neutral ale yeast “We like to think we
make the best beer in Buffalo but thats not to say we dont think others are
also making great beer! For the most part our small scale is something of
a liability but when it comes to two things—freshness and variety—it does
have advantages Ultimately were very much a brewers brewery and I
think it shows in the beer”
